The crust of bean paste cake is more of a Cantonese moon cake than of a Suzhou style moon cake. Similar to bean paste pastry, bean paste cake also contains jack bean paste. Stewed with sugar and mashed in to tender bean paste, jack bean is favored for its color and creamy texture. In addition to jack bean paste, red bean paste and jujube paste are common fillings. To enrich the texture and flavor of bean paste cake, some will add mochi, walnuts, chestnuts, etc. to make a multiple filling pastry.
