However, the texture and flavor of ox tongue cookie is different in the two region. In Yilan, ox tongue cookie is thinner and longer. 0.1-centimeter-thick, the thinnest ox tongue cookie is crispy and crusty. On the other hand, compared to Yilan, Lukang features a thicker and wider ox tongue cookie with maltose filling. The crust of Lukang’s ox tongue cookie resembles the flaky pastry of sun cake.
