Bean paste pastry is a variation of Suzhou style moon cake. The flaky crust and the sweet paste filling is bean paste pastry’s biggest feature. First, dough and fat must be rolled and folded to create the soft and layered pastry. Then, jack bean will be stewed with sugar and mashed in to tender bean paste. In addition to jack bean paste, red bean paste and jujube paste are common fillings. To enrich the texture and flavor of bean paste pastry, some will add mochi, walnuts, chestnuts, etc. to make a multiple filling pastry. White and puffy soft pastry stuffed with tender, chewy or crunchy stuffing, bean paste pastry is a classic that will never be outdated.
